It’s not every day that an idea for a recipe pops in your head. I have been eating broccoli slaw for a couple of years but I usually stir fry it and enjoy having it as a side dish. However on this occasion I was in the mood for some steaming white rice with butter and for some unknown reason the broccoli slaw popped in my head.
Not wanting to have it as a side dish, I thought… what if I lightly stir fry it and then mix it into some jasmine rice. What’s the worst that could happen? Nothing! I was going to be the only one eating it and if it’s an epic failure then that would be the end of it. Drum roll !!! That was how I came up with this seriously delicious Broccoli Slaw Rice. It was fresh, bright and appealing to the eyes.
My senses became alive at the sight of the dish and I know most will agree that we usually eat with our eyes first. Then we follow with our smell and finally our taste. This beautiful broccoli slaw rice made my mouth water and it tasted great. One spoon was not enough and that evening I wish I had someone t share that meal with. It was then I knew I had to share it with everyone.
Tips for successful Broccoli Slaw Rice
The white rice can also be substituted for brown jasmine rice. I normally keep a small bag at home which I have found inexpensively at Trader Joe.
Use two parts vegetable to one part rice as too much rice will overwhelm the vegetables.
Rice needs to be fluffy not sticky
The spring onion with the butter and salt gives the rice a great flavor.
Don’t overcook the broccoli slaw as the beauty of the dish will be lost
I had it with curry chicken and the sauce from the curry complimented it extremely well. If you wanted to eat it on its own I would pair it with a sauce. Stay tuned for that as I am working on something that would appeal to vegetarians.

Ingredients
- 1 cup long grain rice (jasmine is my favorite)
- 1 package broccoli slaw
- 1 oz butter
- 1/2 tablespoon salt
- 1 1/2 lime
- 1 red onion thinly sliced
- 1 tablespoon red pepper flake
- 1/2 tablespoon garlic powder
- 1 chicken or vegetable bouillon
- 1 spring onion
- 2 tablespoon finely sliced parsley
Instructions
- Add butter, juice if 1/2 lime and spring onion to salted water
- Bring to a boil and add rice
- Steam rice. Try to get grain as loose as possible. Lightly fluff with fork
- Saute red onion in 2 tablespoon oil
- Crumble chicken or vegetable bouillon over onions
- Add full pack of broccoli slaw, garlic powder, 1/2 tablespoon red pepper flakes
- Stir fry for 2 minutes
- Add juice of 1/2 lime, stir and remove from heat
- In a large bowl lightly mix rice with broccoli slaw
- Sprinkle parsley and remaining pepper flake over rice
- Finally, drizzle juice of 1/2 lime over broccoli slaw rice
