My last birthday was beautiful because I spent the day doing exactly what I wanted to do with my friend Sue. Sometimes the simplest things in life are free and are the best. We went for a long drive to the end of Long Island. The destination was great but it was the journey along the way that made it awe-inspiring. You know when they say you shouldn't rush through life, you should stop and smell the roses...well that's what we did and the experience made the trip divine and worth every traffic jam we encountered.

We stopped at a couple of organic farms and visited a vineyard. No wine stomping like you see in the movies but the view was awesome and we felt like we were in a different place and time.
The sight of the vegetables excited my taste buds. I literally wanted to buy everything in sight. Okay some people are turned on by shoes, jewelry but the beautiful array of fruits and vegetables does it for me. All my senses become alive, my heart quickens to a ridiculous pace and my mouth waters just thinking about all the recipes I can create.

The makings of cauliflower shepherd’s pie

This was the inspiration for this dish. Don’t laugh but apart from photos this was the first time  I ever saw a yellow and purple cauliflower. The colors were vibrant and beautiful. I knew at that moment that I wanted to make  a dish that would capture what I  was feeling. It was love at 1st sight and I promise it will also be love at 1st bite for you!!!
Cauliflower is such a versatile vegetable and you can get really creative with it. I recently had buffalo cauliflower and all I kept thinking was that I want to make this for my family. I did not miss the fact that it wasnt chicken.

It took me a while to get here but I decided to make my version of a Cauliflower Shepherd’s Pie.  My Aunt Sonia makes the traditional Shepherd’s Pie all the time but I knew that this yellow cauliflower would make this dish extra special, plus make it a healthier substitute for the potatoes.

This Cauliflower Shepherd’s Pie will totally surprise you and will convert you if you are doubtful. I offered tastings to a few family members and friends and the reaction from everyone was the same. “Oh my God, do you have more? Is this really cauliflower? I wasn’t sure I would like it. Aunt Sonia makes the traditional version all the time but she made me the happiest when she asked for the recipe and came back for seconds and thirds-_-

Ingredients

  • 1 lb ground turkey
  • 2 cloves garlic crushed
  • 1 medium onion chopped
  • 1 medium bell pepper chopped
  • 1/4 cup finely chopped jalapeno pepper
  • 3 sprigs thyme
  • 2 tablespoon Worcester sauce
  • 1 tablespoon paprika
  • 1 tablespoon italian seasoning crushed between your fingers
  • 2 chicken bouillon diluted in 1 cup hot water
  • 2 tablespoon honey
  • 3 cups tomato sauce (use your favorite)
  • 1 medium cauliflower head
  • 3 oz cheese grated (Provolone and Asiago or Parmesan)
  • 1 cup panko bread crumbs
  • 2 tablespoon butter
  • 1 clove garlic minced

Instructions

  • Remove stem and steam cauliflower in double boiler for 15 minutes
  • Cream hot cauliflower with grated cheeses
  •  
  • Saute melted butter and minced garlic for 1 minute
  • Add breadcrumbs and toast to a light golden brown  (approx 2-3 minutes)
  • Remove from heat and set aside
  •  
  • Saute ground turkey breaking it apart so that it resembles fine bread crumbs
  • Add chopped onions, minced garlic, thyme and bell pepper; continue cooking for 5 minutes
  • Add Worcester sauce, tomato sauce, honey, italian seasoning, paprika, chicken stock
  • Simmer for 20 mins, taste and adjust flavor
  •  
  • Add turkey and sauce to pie dish
  • Layer the mashed cauliflower on meat sauce
  • Sprinkle garlic breadcrumbs on top
  • bake at 375 degrees uncovered for 15 minutes
  • Allow to cool before cutting

Notes

You can make this recipe your own by using your favorite meat sauce to cook your ground turkey. Also use your favorite combination of cheese; one salty and one mild and creamy to add to the cauliflower.
