I am becoming quite the avid baker. If you have read any of my previous post you will notice that I make mention of my Aunt Sonia who is the family resident baker. My banana bread recipe came from her and I added my special touch to it. However my mind is expanding and I am excited to try new things on my own. What I am learning through this process is that your imagination is limitless and it can lead you to the most beautiful creations at times.
To be honest, I created this delectable blueberry cream cheese recipe without knowing that what I was conjuring up in my head was called a galette. I had a box of store bought scone mix and was not impressed with the scone when they were baked.
Like most of my creations, I got the idea for this recipe laying in bed one night dreaming about food. I remembered that I had the rest of the scone mix and knew it needed some help to taste better than the first trial. So I decided to roll out the rest of the scone mix and then top it with some fruits.
You really have to try this beautiful pastry; my very own Blueberry Cream Cheese Galette. I was surprised at how great it tasted.
The blueberries provided a pop and a burst of the just the right amount of sweetness in your mouth, Plus the addition of the cream cheese created a nest for the delicate berries to lay on and prevented the base of the galette from getting soggy. It was sheer perfection:)
My Blueberry Cream Cheese Galette looks like I have been slaving over it but it came together really quickly and the end results speak for itself. Its stunning to look at, delectable and leaves you wanting more.
I had a box of scone mixture that I used for my base. However I have included a scone recipe for you to use or you can try the Pillsbury pie crust. Great on its own but I am sure a scoop of vanilla ice cream may add a extra layer of flavor. And as always, don’t take my word for it, try this recipe and let me know what you think.

Ingredients
- 3 cups blueberries
- 2 tablespoon cornstarch
- 1 tablespoon lemon
- ½ cup sugar
- 1 tablespoon butter cut in small cubes
- 1 box Philadelphia cream cheese
- 1 egg
- 1 tsp vanilla extract
- ½ cup sugar
- Pillsbury Pie crust
Instructions
- Combine sugar, cornstarch,
- Add sugar combo to blueberries
- Add lemon juice
- Mix gently and set aside
- Mix cream cheese, egg, vanilla and sugar to a smooth consistency
- Follow directions to roll out dough
- Add ½ of the cream cheese mixture to the dough
- Add blueberry mixture
- Crimp the edges of the dough so that it forms a pocket
- Brush edges with a little milk
- Dot the chopped butter all over the blueberries
- Bake for 20 mins in 370 degrees preheated oven

- 2 cups all-purpose flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter, cut into 1/2-inch cube
- 1 cup whipping cream, divide
- Wax or parchment paper
- Stir together first 4 ingredients in a large bowl. Cut butter into flour mixture with a pastry blender until crumbly and mixture resembles small peas. Freeze 5 minutes. Add 3/4 cup plus 2 Tbsp. cream, stirring just until dry ingredients are moistened.
- Turn dough out onto wax / parchment paper; gently press or pat dough into a 12-inch round (mixture will be crumbly). You can use a floured rolling pin to roll out dough.
- Transfer to a parchment lined baking sheet.
- Add ½ of the cream cheese mixture to the dough
- Add blueberry mixture
- Dot the chopped butter all over the blueberries
- Fold over and crimp the edges of the dough so that it forms a pocket
- Brush edges with a little cream just until moistened
