The inspiration for this dish came from Giada DeLaurentis. She featured this dish on one of her shows '15 minute pasta recipes' and this one spoke volumes to me. As usual I thought about my Aunt Sonia as she is a pasta lover. Slowly I am beginning to understand why.
I have only had mascarpone cheese in sweet desserts but Giada introduced it in this pasta dish and I knew before trying it that I would enjoy it. I was drooling by the time she had finish putting the recipe together. Funny how things just come together. I happen to be in my local grocery store when I saw a pack of spicy sausage reduced for quick sale. I purchased it and made a mental note to gather the other ingredients needed to try this Fusillata Casareccia dish.
I found the fusillata casareccia in the gourmet section of my local Home Goods (you know its my favorite store!). Of course I picked them up because they were red ‘sticker-ed’ and at the time I thought I will find something to make with them. I have since fallen in love with them. They have a good bite and the shape is great for hiding sauce that just provides an explosion in your mouth.
This dish was quick and easy to prepare. It was creamy, and had a moreish taste as I kept dipping my spoon for a second and third taste. I added some bell peppers and baby tomatoes to my recipe.
But you can pretty much put your own spin on it to make it your own, After all that’s what makes cooking so exciting. Take a basic idea from a recipe and add your own spin to it You cannot go wrong!
For me it was the introduction of the mascarpone cheese that really made this dish a stand out. It coated the fusillata casareccia and kept it moist. I am already thinking about all the other recipes I could create with the mascarpone cheese.
