The spinach is the main feature of this dish but the addition of the vegetable medley compliments it really well and gives it a fresh, bright and light quality.

This Spinach Stir Fry with Vegetable Medley is quick and easy to prepare. It’s excellent for one of those lazy days when you want to go meatless and for some of you a new spin on an old time favorite. The only word of caution for the success of this dish is to pay attention to the timing of each step. It is important that the vegetables are not over cooked. They should remain crisp and look bright in color.

Therefore prep all your vegetables ahead of time so that you can move through each step effortlessly. Cut them in even sizes. The zucchini and the bell peppers should be sliced in strips, then cut in small cubes. Slice the baby tomatoes in halves.

There are several ways to enjoy this delicious spinach stir fry with vegetable medley. It is great as a side dish to fish chicken pork. On its own it also pairs well with a bowl of rice. Another healthier alternative is to make a fried rice substituting the rice with quinoa. Ingredients

  • 3 tablespoon olive oil
  • 1 medium onion fine chopped
  • 1 teaspoon grated ginger
  • 1 small whole corn shaved or small can of corn
  • 1 Knorr chicken or vegetable bouillon
  • 1/2 small red, yellow or orange bell pepper cut in small cubes
  • 1 small size zuchinni cut in small cubes
  • 3 cloves of garlic grated
  • 10 oz bag of spinach chopped or 2 bunches of spinach chopped stems removed
  • 1 teaspoon crushed red pepper
  • 10 baby tomatoes cut in half

Instructions

  • Saute onion over medium heat for 1 minute
  • Add fresh corn and ginger, saute for another minute
  • Add bell pepper and bouilion saute for 1 min, add garlic
  • Add zuchinni saute for 1 min
  • Sprinkle crushed red pepper, increase flame to high
  • Add spinach stir fry for additional minute
  • Add tomatoes, stir and turn off stove

    A colorfully presented plate is what attracts me to a dish, especially if there's veggies in it, and this one rocks. I so eat with my eyes. Very inspiring.
