Ingredients
- 3 tablespoon olive oil
- 1 medium onion fine chopped
- 1 teaspoon grated ginger
- 1 small whole corn shaved or small can of corn
- 1 Knorr chicken or vegetable bouillon
- 1/2 small red, yellow or orange bell pepper cut in small cubes
- 1 small size zuchinni cut in small cubes
- 3 cloves of garlic grated
- 10 oz bag of spinach chopped or 2 bunches of spinach chopped stems removed
- 1 teaspoon crushed red pepper
- 10 baby tomatoes cut in half
Instructions
- Saute onion over medium heat for 1 minute
- Add fresh corn and ginger, saute for another minute
- Add bell pepper and bouilion saute for 1 min, add garlic
- Add zuchinni saute for 1 min
- Sprinkle crushed red pepper, increase flame to high
- Add spinach stir fry for additional minute
- Add tomatoes, stir and turn off stove
